My reading of the turn sequence summary at the end of the rulebook suggests that you can't attack, ready Dunhere with Unexpected Courage, and then attack again all in the Combat phase. The turn sequence is:
1. Deal Shadow cards
2. Player actions
3. Resolve monster attacks on the player
4. Resolve player attacks on the monsters
5. Player actions
Based on the above, you don't have an action window in which to ready Dunhere for him to attack again.
You could use his ability to attack an enemy in the Staging area though, before or after Combat during an action window.
